I used leftover lamb from the weekend for this super quick meal, it can be of course any meat you have to use up. Finely chopped with veggies of your choice. From start to finish this meal was ready in 20 minutes, slicing/chopping reduces the cooking time dramatically.

A great way to grab a meal through the working week and especially if you arrive home late and have so much on.

Ingredients
 
• Leftover meat of your choice, chopped/sliced
• 1 shallot, this could be onion if that’s all you have
• 1 carrot, finely sliced
• 1 small red pepper, finely chopped
• 1 small yellow pepper, finely chopped
• Any green veg you have, I used a small quarter of cabbage
• 1 tsp crushed garlic
• 1 tsp basil
• 1 tsp smoked paprika
• Sea salt/Coarse black pepper
• Spray oil
 
Method
 
1. Heat a non stick pan or wok over a medium heat
2. Lightly spray oil the bottom of the pan
3. Now add your leftover meat and allow to cook through
4. Add your veggies/herbs and a light seasoning
5. Again allow to heat through and mix together
6. This will should take no longer than 5-10 minutes and the meal is ready to serve
7. I like to build the meat/veggies into a tower, capturing the eyes
8. Use a chefs cooking ring to build it up, you could use a small ramekin dish and turn it out onto your plate
