How many of you have tried to poach the perfect egg and end up with the egg white floating around the pan within the first few seconds? You’ve tried to create the whirlpool technique only for the yolk to sit in the centre and the egg white  has decided to do its own thing once more? 

Eggs aren’t cheap and they are certainly not to be wasted. I decided years ago to use the cling wrap method and to this day every egg isn’t wasted and delivers that runny yolk without effort.


  • 2 fresh eggs
  • 1 Sheet of cling wrap
  • 1 avocado
  • 10-12 small cubes feta cheese
  • 2 finely chopped spring onions
  • 2 deseeded tomatoes finely chopped
  • Any salad leaves you may have
  • 1 tbsp. balsamic vinegar
  • Juice of 1 lemon
  • Herbs/Spice of your choice
  • Sprinkle of coarse black pepper and sea salt
  • Spray oil


  • Start with the poached egg, boil the kettle and fill a small pan with boiling water and allow to simmer over a low heat on the hob
  • Fold your sheet of cling wrap inside a small bowl, don’t make any holes in it and be gentle and mould to the shape of the bowl
  • Give a couple of sprays of the spray oil around the inside of the cling wrapped mould, you don’t want the eggs to stick to it once cooked
  • I cracked both eggs into the mould, if you want one just do separate wrapped moulds
  • Add a sprinkle of coarse black pepper/sea salt and pull up the 4 corners of the cling sheet
  • Tie the 4 corners off and form a seal, be careful not to break the yolks
  • Gently lower into the simmering pan and allow to poach, do not have the water bubbling away!
  • I did mine for 7 minutes and that left a firm egg white and a nice runny yolk
  • Whilst the eggs poach you can make the feta salad
  • In another bowl add the feta/avocado and all the salad ingredients/herbs,spice along with the balsamic vinegar, sprinkle of sea salt/coarse black pepper and lemon juice
  • Give all a good mix together and start to dress your serving plate
  • Once you poached eggs are ready remove from the simmering water and gently place into cold water
  • Cut off the top of the cling wrap and remove the eggs gently over a piece of kitchen roll
  • Finally lift the poached eggs onto your feta salad and enjoy a stress free runny yolk
