Last night we had a small amount of broccoli and cauliflower to use up with a small amount of chicken fillet. This recipe is another simple, effective and any veggies or flavours can be added to them. Food doesn’t have to cost a fortune, get creative and use the produce up that you have purchased.


  • 200g blitzed broccoli & cauliflower (all water/moisture removed)
  • 1 finely chopped shallot
  • 2 tsp crushed garlic
  • 1 tbsp. dried parsley
  • 1 egg
  • Sea salt/coarse black pepper
  • Spray oil



  • In a large mixing bowl add the blitzed broccoli/cauliflower
  • Add the chopped shallot/garlic/parsley and give the bowl a good mix around
  • Now add the egg and mix well together
  • Line an ovenproof baking tray with baking parchment
  • Set the oven to 180c
  • Shape the broccoli/cauliflower mix into small fitter shapes, mould and sit on the lined tray
  • Heat a medium sized non stick shallow pan over a medium heat
  • Spray 2-3 mists of oil spray into the pan
  • Now position the fritters into the pan, start at 12pm and work your way around the pan with the fritters
  • Do not be tempted to turn them over, allow to crisp up and become a golden colour
  • When you are happy, gently turn over and allow to colour once more
  • Now you can place them back onto the lined ovenproof tray
  • Place into the oven for around 8-10 minutes to warm through
  • Serve with salad or as I did last night with a feta salad/leftover chicken fillet/avocado and a greek yogurt/mustard sauce
  • Enjoy the simplicity and know you are still getting your nutrition from the veggies
